White Bean, Tomato & Artichoke Soup

White Bean, Tomato & Artichoke Soup is a delicious comfort food that is bursting with flavor.  Ingredients like cannellini beans, diced tomatoes, chopped artichoke and black olives combine for a rich and creamy, classic soup.

 


 

White Bean, Tomato & Artichoke Soup

Ingredients:
1-2 tablespoon olive oil
1/2 medium white onion, chopped
1 stalk of celery, chopped
2 cloves of garlic, minced
1 15 oz. can of diced tomatoes
2 15 oz. cans of cannellini beans, rinsed and drained
1 tablespoon of Italian seasoning
1 12 oz. Jar of artichoke hearts
2/3 cup of pitted black olives, sliced
1/2 cup of fresh basil, chopped
1/4 cup of vegan grated cheese
Dash of Black Pepper
Warm crusty baguette bread
Directions:
-Add the olive oil to a large stock pot over medium heat. Add the onion and celery, sauté for 5 minutes until translucent, then add garlic and stir for 2 minutes.
-Add the cannellini beans, diced tomatoes, black olives, artichoke hearts and Italian seasoning. Stir to combine, then simmer for 15 minutes. Add additional seasoning if desired.
-Prepare soup in serving bowls and garnish with chopped basil along with warm crusty bread, Enjoy!
