I made a simple, yet refreshing Watermelon Salad to enjoy on this hot summer day. I added peaches, vegan feta cheese, and fresh cucumber to chunks of seedless watermelon for a flavorful combination. This salad was cool and refreshing.

Watermelon Salad
Ingredients:
2 yellow Peaches, quartered
1 Small seedless watermelon, cut into 1 inch cubes or melon balls
1/2 Red onion sliced
Sprinkle of mint leaves, chopped to garnish
2 Tablespoons of olive oil
Himalayan salt and pepper
1 Sheet of vegan feta cheese, cut into 1/2 inch cubes, or add more if desired
2 Cucumbers, sliced into 1/2 inch thick round slices
Vinaigrette Dressing:
4 Tablespoons of olive oil
3 Tablespoons of red wine vinegar
2 Cloves of garlic, minced
1 Green onion, chopped finely
1 Teaspoon of Italian seasoning
Himalayan salt and pepper
Directions:
-Mix the watermelon, onions, peaches and cucumber in a large bowl. Add Himalayan salt and pepper and toss to mix well. Transfer to a serving tray then add the vegan cubed feta cheese.
-In a small bowl whisk together the vinaigrette dressing ingredients then drizzle over the salad. Garnish with mint. Serve and enjoy!
