Veggie Pizza Burgers

These Veggie Pizza Burgers were made using some delicious plant based meat, sautéed vegetables, and a flavorful pizza sauce.  The pizza and burger combination was a perfect combination and so full of flavor.  I served mine with sliced pickles, some shaved vegan parmesan cheese and a side of baked steak potato fries.  These burgers would taste as good for dinner or for lunch.

Veggie Pizza Burger

Ingredients:
1 15oz Can of black beans low sodium, rinsed and drained
1/2 Cup of oats
3/4 Cup of cooked quinoa
1 Garlic clove, minced
1 Tablespoon of Italian seasoning
Pinch of Himalayan salt and pepper

Sautéed Vegetables
1 Pint of sliced mushrooms
1 Green pepper, sliced
1 Onion, sliced
Pizza Sauce
Vegan Parmesan cheese
2 Tablespoons of olive oil

Directions:
-Make the quinoa according to directions on packaging.
-In a large skillet, add 1 tablespoon of olive oil, along with mushrooms, green bell peppers and sliced onions. Add Himalayan salt and pepper then sauté for s out 5 to 7 minutes then set aside.
-Add the oats in the food processor and pulse until textured flour is formed, add to a large bowl for mixing.
-Rinse and drain the black beans, pulse in the food processor until they are broken and mashed. Add to the bowl.
-Roughly chop and measure onion, add to the food processor with garlic and pulse until it’s tiny minced looking, add to skillet for 5 minutes to caramelize and then add to the bowl with other ingredients.
-Then add the quinoa to the bowl.
-Mix with spoon to combine ingredients really well and form a large burger patty.
-Add 1 tablespoon of olive oil, heat it to medium heat and place the burgers in a skillet. Let them cook until golden brown and crispy for about 5-10 minutes and carefully flip and cook the other side until done. Add your veggie burgers to a toasted bun along with sautéed vegetables, pizza sauce and parmesan cheese. Add your favorite fixings. Enjoy!
