Vegetable Pizza Tart

Try making this Vegetable Pizza Tart for lunch.  Some key ingredients include red and green peppers, black olives, red onions and zucchini.  The crust was topped with everything bagel seasoning.

 


 

Vegetable Pizza Tart

Ingredients:
1 Red onion, peeled, cut lengthways, then sliced thinly
1 Green pepper, sliced thin
1 Red pepper, sliced thin
1/4 cup of olives, sliced lengthwise
2 tablespoons of olive oil
1 Clove of garlic, minced
1 Puff pastry
4 Tablespoons of marinara sauce, or as desired
Vegan shredded mozzarella cheese
Pinch of Himalayan salt pepper, optional
-2 Tablespoons of fresh basil, chopped (or as desired)
2 tablespoons of almond milk
Directions:
-Preheat the oven to 400F.
-Line a baking sheet with parchment paper and roll out the pastry and place it on a lined baking sheet.
-Use a sharp knife, to score the pastry along the edges about 2.5cm in from the edge. Then use a fork to prick the pastry. Use a pastry brush to brush the edges of the tart with almond milk then sprinkle everything bagel seasoning around the tart.
-Poke holes in the center of the pastry tart with a fork, then brush the middle of the pastry with a little olive oil. Add the marinara sauce and chopped basil over the pastry avoiding the edges. Evenly sprinkle the plant based cheese over the pastry. Add the sliced red pepper, green pepper, red onions, garlic and black olives to the tart. Top with a 2 tablespoons of olive oil over the vegetables.
-Bake on the top shelf of the oven for 20 minutes or until the pastry has risen, and the tart is golden brown around the edges and the pastry is cooked. The cheese should be also melted. Slice and enjoy!
