Vegetable Pasta Salad with Plant Based Pepperoni

Vegetable Pasta Salad with Plant Based Pepperoni has some delicious ingredients like plant based pepperoni, red and green peppers, zucchini, brown rice pasta, green olives, grape tomatoes and vegan feta cheese.

 


Vegetable Pasta Salad with Plant Based Pepperoni

Ingredients:
12 oz. of brown rice rotini pasta
1 Cup of plant based pepperoni, sliced
I 1/2 Cups of cherry tomatoes, halved
1 Green pepper, chopped
1/2 Zucchini, quartered
1/2 white onion, chopped
1/2 Cup of green olives, drained and sliced
1/2 Cup of vegan feta cheese, chopped
1/4 Cup of fresh basil, chopped
Vegan grated Parmesan cheese, (optional)

Greek Italian Dressing:
1/2 Cup of olive oil
1/4 Cup of red wine vinegar
2 Tablespoons of lemon juice
2 Teaspoon of Dijon mustard
2 Garlic cloves, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of pepper

Directions:
-Place the dressing ingredients into a mason jar and shake for a good 30 seconds. Set aside.
-Prepare brown rice pasta accordingly to directions on packaging. Once done rinse with cool water. Set aside to cool completely. Then add to a large bowl with the rest of the ingredients. Pour the desired dressing amount and toss to until coated. Sprinkle with vegan Parmesan cheese. Serve and enjoy!
