Vegetable and Plant Based Steak Fajitas

Vegetable and Plant Based Steak Fajitas is a delicious Mexican dish that is full of flavor.  It’s made using plant based steak, roasted red and green peppers, and white onion.  This is a great dish to serve with baked beans and pico de gallo.

 


Vegetable and Plant Based Steak Fajitas

Ingredients:
3 bell peppers, red and green, you can also use yellow, if you desire
1 medium white onion, sliced
1 cup of mushrooms, pre-sliced
6-8 Tortillas
2 Tablespoons of olive oil
1 15 oz. can of black beans, rinsed and drained, optional
Fajitas Seasoning
1 Tablespoon of Italian seasoning
2 Teaspoon of smoked paprika
1 Teaspoon of chili powder
1 Teaspoon of onion powder
1 Teaspoon of Taco seasoning, or more if desired
Directions:
-Preheat oven to 350F.
-On a baking sheet with parchment paper, add two tortillas, then brush lightly with olive oil. Add to the baking sheet and bake for 5 minutes or until warm.
-Add vegetables to a large bowl with olive oil and seasoning.
-Combine ingredients and add to a cast iron pan with 2 tablespoons of olive oil. Sauté for 5 to 7 minutes or until vegetables are lightly browned. Then add the plant based meat and sauté according to directions on packaging for about another 5 minutes or until cooked through.
-Serve on your favorite tortillas with salsa, beans and guacamole. Enjoy!
