This weekend I made these most delicious Vegan Zucchini Fries. They were made with fresh sliced zucchini that I dipped in a batter made from nutritional yeast flakes, cayenne pepper, and onion powder, to name a few ingredients. They are budget friendly and very easy to make!
Vegan Zucchini Fries
Ingredients:
2 Organic zucchini
1/2 Cup of almond milk (non-dairy)
Seasoning:
1/4 Cup of almond flour
1/4 Cup of nutritional yeast
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of onion powder
1/4 Teaspoon of black pepper
1/4 Teaspoon of organic ground cayenne pepper
1/2 Teaspoon of paprika
Directions:
-Preheat the oven to 350F degrees.
Prepare the seasoning:
-Add all the ingredients for the seasoning to a medium bowl and mix until well combined. Set aside.
Prepare the zucchini:
-Cut both ends of the zucchini, then cut in half. Leave the skin on then slice it into thick fries. Cut both zucchini’s, then set aside.
Assemble:
-Assemble zucchini in one section, then a medium bowl with almond milk, small bowl with 1/2 of the seasoning mixture, baking pan lined with parchment paper.
-Then dip each piece of sliced zucchini into the bowl of almond milk, then put into the seasoning mixture, toss until the zucchini is covered on all sides. Place on baking sheet. Repeat until you run out of zucchini.
-If you run out of seasoning, add the second half to the same bowl and repeat steps until you run out of zucchini. (Note: halfway through the seasoning mixture it gets saturated with almond milk and doesn’t stick as well to the zucchini, so you can start halving the mixture).
-Place the baking pan in the oven and bake for approximately 15-20 minutes, or until coating becomes golden. Flip the fries over and bake for another 15-20 minutes, or until the coating become golden. Try not to over bake or burn them. Serve hot and enjoy with your favorite dipping sauce. Enjoy!
