My Vegan White Chocolate Almond Nut Cookies are great for dessert. They were moist and chewy, as well as pretty easy to make.
Vegan White Chocolate Almond Nut Cookies
Ingredients:
1/4 Cup of organic sugar
1/2 Cup of vegan butter, softened slightly
1/4 Cup of almond milk
3/4 Cup of coconut sugar
2 Teaspoons of vanilla extract
1 3/4 Cups of all-purpose gluten free flour
1 Teaspoon of baking soda
1 Teaspoon of cornstarch
1/2 Teaspoon of Himalayan salt
1 Cup of nondairy white chocolate chips
1 Cup of almonds, chopped
Directions:
-Preheat the oven to 350F degrees. Then line a baking sheet with parchment paper. Set aside.
-In a large size bowl, add the coconut sugar, vegan butter and organic sugar. Use a hand held electric mixer to cream the ingredients until fluffy for about 2 to 3 minutes. Then add almond milk and vanilla extract. Combine ingredients again.
-Add all purpose gluten free flour, baking soda, cornstarch and Himalayan salt to the bowl. Mix together until the ingredients are incorporated then add chopped almonds and white chocolate chips.
-Scoop cookie dough into balls and add to a cookie sheet. Bake cookies for about 12 minutes or until golden brown. Remove from the oven while the center is still soft. This makes the center of cookie chewy. Add cookies to a wire rack to cool and depuff. Enjoy!
