Vegan Wellington

This Vegan Wellington would be a great dish to have for an upcoming holiday dinner.  Some of the ingredients are plant based meat, sautéed vegetables, and vegan parmesan cheese.   It’s wrapped in a flakey, puffed pastry dough.

 


Vegan Wellington

Ingredients:
1 1/4 pounds of plant based meat, Beyond Meat
(1 & 1/4 package or as desired)
1 Puff pastry
1 Carrot, diced
2 Cloves of garlic, minced
1 Green pepper, diced
10 sun-dried tomatoes, chopped
Sprinkle vegan parmesan cheese, (optional)
Fresh Basil, chopped

Gravy
2 Cups of vegetable broth
1 Tablespoon of cornstarch
1/2 Teaspoon of Himalayan salt
1/2 Teaspoon of black pepper
1 Tablespoon of onion powder
2-3 Sprigs of fresh thyme
1 Tablespoon sugar free maple syrup

Directions:
-In a large bowl, add the beyond meat, fresh basil, chopped, Himalayan salt and pepper. Combine well and form into a loaf. Wrap loaf in plastic wrap or parchment paper.
Then put in the refrigerator for 20 minutes.
-Prepare a cast iron skillet with 1 to 2 tablespoons of olive oil. Add carrots, onions, garlic and green peppers. Sauté for 5 to 7 minutes or until the carrots are softer and onions are translucent. Then add chopped sun-dried tomatoes. Sauté for an additional 5 minutes then set aside.
Roll out puff pastry on a floured surface. Remove the plant based meat from the refrigerator and set aside Then add sauté vegetables on top of puff pastry.
Spread out vegetables in the middle of the pastry, then add the plant based loaf to edge of the pastry and roll tightly until complete. Seal both edges tightly. Score the top of pastry then brush lightly with almond milk. Sprinkle vegan parmesan cheese.
-Preheat the oven to 400F.
-Bake for 30 to 40 minutes until golden brown. Prepare gravy by adding thyme, seasoning, sugar free maple syrup and vegetable broth to pot. Mix in the cornstarch with a bit of vegetable broth so that way it doesn’t clump up when you add it to the pot. The add cornstarch. Let it come to a bubble and thicken. Taste it before serving to adjust flavors. Once the Wellington is done slice it up add serve with whipped potatoes and gravy. Enjoy!
