My Vegan Walnut and Raisin Cookies were chewy and delicious. They were also easy to make. This is a great recipe that the kids will enjoy making.
I can find all of my baking ingredients from Whole Foods Market, Wegmans and Sprouts Farmers Market. They have an excellent assortment.
Vegan Walnut and Raisin Cookies
Ingredients:
3/4 Cup of Earth Balance butter, softened
3/4 Cup of coconut sugar
1/3 Cup of organic sugar
1 Flax egg, (1 Tablespoon of ground flaxseed mixed with 3 tablespoons of water. Let sit for 5 minutes, stir and add in as directions). You can also use Bob’s Red Mill flax egg, also as directed on packaging.
1 Teaspoon of vanilla extract
1\2 Teaspoon of cinnamon
1 1/3 Cup of all purpose gluten free flour
3/4 Teaspoon of baking soda
1/2 Teaspoon of Himalayan salt
1 1/2 Cup of oats
3/4 Cup of chocolate chips
1/4 Cup of raisins
Directions:
-Make the flax egg, and set aside.
-Preheat the oven to 375F, then cream vegan butter, coconut sugar and organic organic sugar until creamy.
-Add in the flax egg, vanilla extract, cinnamon and mix well.
-Mix flour, baking soda, Himalayan salt and oats in a separate bowl then add dry into the wet ingredients.
-Add the chocolate chips and raisins and combine well.
-Then roll out the cookie dough into a tablespoon sized balls and place them on a baking sheet with parchment paper.
-Bake at 375F degrees for 8-9 minutes, edges should start to brown. Remove from the oven add to a wire rack to cool. Enjoy!
