Vegan Veggie Burgers

I made these awesome Vegan Veggie Burgers recently.  Black beans are a key ingredient because they are so hearty.  I added a slice of vegan Gouda cheese, along with onion, lettuce and tomato.  I also added a chipotle mayo sauce over the burger.  Delicious!

 


 

Vegan Veggie Burgers

Ingredients:

1 15oz Can of black beans low sodium, rinsed and drained
1/2 Cup of oats
3/4 Cup of cooked quinoa
1 Garlic clove, minced
Pinch of Himalayan salt and pepper
4 Slices of vegan Gouda cheese, (optional)
1 Red onion, chopped (add to mixture)(Also add onion to add to top of sandwich), (Optional)
1 Tomato, sliced
1 Avocado mashed
Chipotle Vegan Mayo Sauce
1 Cup of vegan mayonnaise
2 Chipotle peppers in adobe sauce, in adobe sauce
2 Tablespoon of lime juice
Himalayan salt and pepper
Directions: Combine all ingredients in a food processor or blender and purée until smooth. Set aside.
Directions:
-Make the quinoa according to directions on packaging.
-Add the oats in the food processor and pulse until textured flour is formed, add to a large bowl for mixing.
-Rinse and drain the black beans, pulse in the food processor until they are broken and mashed. Add to the bowl.
-Roughly chop and measure onion, add to the food processor with garlic and pulse until it’s tiny minced looking, add to skillet for 5 minutes to caramelize and then add to the bowl with other ingredients.
-Then add the quinoa to the bowl.
-Mix with spoon to combine ingredients really well and form a large burger patty.
-Add 1 tablespoon of olive oil, heat it to medium heat and place the burgers in a skillet. Let them them cook until golden brown and crispy for about 5-10 minutes and carefully flip and cook the other side and add Gouda cheese and fixings. Add mashed avocado on burger bun with lettuce, tomato, sauerkraut and onion topped with chipotle sauce. Enjoy!
