Vegan Tomato Salad with Avocado and Mozzarella

I made this delicious Vegan Tomato Salad with Avocado and Mozzarella for lunch recently.  I used some tasty plant based mozzarella cheese, yellow and red grape tomatoes, avocado, fresh basil and onions as some of the ingredients.  I spread a light and tasty dressing on the salad before serving.

Vegan Tomato Salad with Avocado and Mozzarella

1/2 Pound of red grape tomatoes, halved
1/2 Pound of yellow grape tomatoes, halved (optional)
1 Avocado, chopped
1 Zucchini, quartered
1/3 Cup of white onion, chopped
1/2 Cup of green olives, pitted
1/4 Cup of basil pesto
1 Tablespoon of lemon juice
Himalayan salt and pepper
-In a large bowl, combine halved red grape tomatoes and halved yellow tomatoes, avocado, quartered zucchini, chopped white onion, olives and vegan mozzarella cheese. You can use a melon scooper to make the cheese balls.
-Then add the basil pesto and lemon juice to the salad add toss. Season with Himalayan salt and pepper as desired. Enjoy!
