My Vegan Sugar Cookie Bars are a great dessert. These bars are chewy and delicious, and they are topped off with a smooth and creamy, vegan cream cheese icing and then sprinkled with jimmies.
Vegan Sugar Cookie Bars
1/2 cup of organic sugar
2 tablespoons of nondairy almond milk
1 teaspoon of vanilla extract
1/4 teaspoon of baking soda
1 teaspoon of baking powder
1/4 teaspoon of Himalayan salt
-For the bars: Preheat the oven to 350F. Line a 9 inch pan with parchment paper or spray the pan with a nonstick cooking spray. Set aside.
-In a large bowl, combine the vegan butter and organic sugar. Cream together for about 4 minutes on a low speed.
-In a medium size bowl, sift the flour, baking soda, baking powder and Himalayan salt. Whisk until combined. Then add your flour mixture into the wet and combine ingredients for about 2 to 3 minutes until incorporated.
-Transfer dough to your 9 inch pan. Bake for 22 to 23 minutes. Let cool completely before frosting.
-Add your favorite vegan cream cheese frosting and top with sprinkles and enjoy!
