For a hearty and tasty meal, try this making this Vegan Stew.  It’s a delicious comfort food that has gnocchi, diced tomatoes, and an assortment of fresh ingredients as key ingredients.   It will warm you up nicely on a chilly day and it also packs a nice kick.

 


 

Vegan Stew

Ingredients:
1lb of gnocchi potato dumplings
1 package of plant-based steak
1 medium white onion, chopped
1/3 cup of fresh parsley, roughly chopped
12 oz. frozen mixed vegetables, thawed out and rinsed
1 cup of fresh tomatoes, diced
2 cloves of garlic, minced
2 sprigs of rosemary, remove stems, chopped
1 tablespoon of smoked paprika
1 tablespoon of Italian seasoning
½ teaspoon of cayenne pepper, optional
1/3 cup of gluten-free flour
2-4 cups of vegetable stock, low sodium
Black pepper to taste
Directions:
-Preheat a heavy bottom Dutch oven pot over low heat, add 1 tablespoon of olive oil and chopped onions and sauté until translucent.  Add in the garlic and cook a few more seconds.
-Whisk in the flour with the vegetable stock until combined then add the frozen vegetables, plant-based steak, chopped tomatoes, gnocchi and seasoning to the pot. Bring to a simmer and cook everything for 30 to 45 minutes until fork tender and the gnocchi float to the top.  Season with black pepper.  Stir and garnish with fresh parsley serve and enjoy.
