Vegan S’mores Cookies with Vanilla Icing are moist and delicious. I used some non-dairy chocolate chips and I topped the cookies off with a creamy vegan vanilla frosting.
Vegan S’mores Cookies
Ingredients:
1/2 Cup of vegan butter
1 cup of coconut sugar
1/4 Cup of plant based almond milk
1.5 Teaspoon of vanilla extract
1.5 Cups gluten free all-purpose flour
1/2 Cup of crushed vegan graham crackers
1 Teaspoon of baking soda
1/2 Teaspoon of Himalayan salt
1/4 Teaspoon of cinnamon
1/2 Cup of nondairy chocolate chips
Directions:
-Preheat the oven to 350F degrees. Then line a large baking sheet with parchment paper.
-Add 6 graham crackers to a food processor or you can use a zip lock bag and crush them with a cup until crumbled.
-Add vegan butter and coconut sugar to a medium size bowl. Use a hand mixer to cream the ingredients together. Then add the almond milk and vanilla extract, combine Ingredients. -Add the flour, crushed graham crackers, baking soda, Himalayan salt and cinnamon to the bowl mix. Combine the dry ingredients into the wet ingredients until combined. Add the chocolate chips and mix again.
-Use a lined baking sheet with parchment paper and scoop the cookie dough into balls and transfer to the baking sheets. Bake for 13-15 minutes in the oven on the middle rack. The cookies should be a little puffy and under-baked when removed from the oven. Let the cookies cool for about 20 minutes to firm up. Prepare another baking sheet and scoop the rest of the S’mores cookie dough if necessary and repeat baking process.
-Once the cookies have cooled, spread a vegan vanilla frosting of choice and enjoy!
