Vegan Roasted Vegetable Tart

This past weekend, I made this tasty Vegan Roasted Vegetable Tart.  Some of my ingredients included zucchini, red bell pepper, grape tomatoes, red onions and vegan goat cheese.  I coated them with Balsamic vinegar and avocado oil and roasted them on a light pastry sheet.  The roasted vegetables made it full of flavor, with a light texture.  I hope you enjoy making it.

Vegan Roasted Vegetable Tart


Ingredients:
1 Pint of grape tomatoes, or as desired
1 Zucchini, sliced
1/2 Medium red onion, peeled, cut lengthways, then sliced thinly
1/2 Red pepper, sliced thin
2 Tablespoons of avocado oil, divided
1 Tablespoon of balsamic vinegar, or as desired
1/2 Teaspoon of Himalayan salt and pepper
1 320g roll and ready puff pastry
2 Tablespoons of marinara sauce, or as desired
125g of vegan goat cheese, (1 small log about 5 oz)
Pinch of Himalayan salt pepper
2 Teaspoons of almond milk
4 sprigs of thyme

Directions:
-Preheat the oven to 392F/200C. Line a baking sheet with parchment paper.
-Add all the vegetables to a large bowl with balsamic vinegar, 1 tablespoon of avocado oil, Himalayan salt and pepper. Mix everything well and add to a baking sheet with parchment paper and roast with for 15 minutes.
-Roll out the pastry and place it on a lined baking sheet. Prepare accordingly to directions on packaging.
-Use a sharp knife, to score the pastry along the edges about 2.5cm in from the edge. Then use a fork to prick the pastry.
-Spread the marinara sauce over the pastry avoiding the edges. Evenly place the red onion over the pastry. Then use a slotted spoon to add the other roasted vegetables to the tart. Crumble the vegan goat cheese over the tart then add the thyme. Add the sprigs or pluck the leaves add scatter them over the tart.
-Drizzle the rest of the olive oil over the tart and add about 1/4 teaspoon each of Himalayan salt and pepper. Use a pastry brush, brush the edges of the tart with almond milk.
-Bake on the top shelf of the oven for 20 minutes or until the pastry has risen, the tart is golden brown around the edges and the pastry is cooked. Serve and enjoy
