Try this Vegan Pumpkin Parfait for dessert. It’s made using pumpkin puree, vegan cream cheese, sugar free maple syrup, cinnamon, caramel and a dollop of whipped topping.
15 oz. can of pumpkin purée
1/4 cup of sugar free maple syrup
1 teaspoon of vanilla extract
1 teaspoon of pumpkin pie spice
1/2 cup of granola, or as desired
-In a small bowl add granola then set side.
-In a large mixing bowl, add the vegan cream cheese, pumpkin purée, sugar free maple syrup, vanilla extract and pumpkin spice. Use a hand held mixer and combine well.
-In your favorite glass, add 1/4 cup vegan whipped topping and 1/4 cup of pumpkin filling. Repeat the process, (if your glass is large enough). Top with a sprinkle of granola and a dollop of vegan whipped topping. Serve or cover with plastic wrap and refrigerate 1-2 hours. Enjoy!
