Try this Vegan Pumpkin Parfait for dessert. It’s made using pumpkin puree, vegan cream cheese, sugar free maple syrup, cinnamon, caramel and a dollop of whipped topping.
Vegan Pumpkin Parfait
8 oz. Vegan cream cheese
15 oz. Can of pumpkin purée
1/4 Cup of sugar free maple syrup
1 Teaspoon of vanilla extract
1 Teaspoon of pumpkin pie spice
1 Cup vegan whipped topping
1/2 Cup of granola, or as desired
-In a small bowl add granola then set side.
-In a large mixing bowl, add the vegan cream cheese, pumpkin, sugar free maple syrup, vanilla extract and pumpkin spice. Use a hand held mixer and combine until smooth.
-To assemble, spoon 2 heaping tablespoons of granola into a tall glass. Then add 1/4 cup vegan whipped topping and 1/4 cup of pumpkin filling. Repeat the process, (if your glass is large enough). Top with a sprinkle of granola and a dollop of vegan whipped topping or cover with plastic wrap and refrigerate 1-2 hours then serve chilled. Enjoy!
