Vegan Pretzel Bites

My Vegan Pretzel Bites are tasty, chewy and easy to make.  They have that classic soft pretzel flavor, and they are perfect for dipping.  This is a great healthy treat to make with the kids, and the pretzel bites are the perfect appetizer or snack.  You can serve these with dips like yellow or Cajun mustard, or a nice vegan cheese sauce.  For some really cool Kitchen Essentials, click over to my Shop Page.

Vegan Pretzel Bites


Ingredients:
3 and 1/2 to 4 cups of gluten free all-purpose flour
1 and 1/2 cups of warm water
1 Tablespoon of coconut sugar
2 Teaspoons of active dry yeast, or 1 package
1 and 1/2 teaspoons of Himalayan salt
3 Tablespoons of refined coconut oil, melted

Baking Soda Bath
5 Cups of water
3 Tablespoons of baking soda

Topping
Coconut oil for brushing
Coarse sea salt

Directions:
-Start by warming your water. You want it to be warm to the touch, but not hot.
-Pour the warm water into a large bowl and mix in sugar. Then sprinkle the yeast on top. Cover and let sit for 10 min to activate the yeast.
-When the yeast is foamy, mix the salt and coconut oil.
-Now slowly combine in 2 cups of flour. When it’s well blended, mix in the 3rd cup of flour. If the dough is too sticky to handle , mix in
enough flour from 4th cup until you can handle dough.
-Then on a clean lightly floured surface, knead your dough for 3-5 minutes, then adding more flour as needed. About 4 cups.
-Once the dough has been kneaded, shape it into a ball and place in a large oiled bowl. Cover and set in a large warm place to rise for 15-20 minutes. Line two baking sheets with parchment paper and set aside. Preheat your oven to 450F and heat the water for the baking soda bath.
-Once the dough has risen a little, cut it into 8 triangles. Use your hands and roll each triangle out to an 18 inch long rope. Cut each rope into 8-9 2 inch bites
-Once the water is boiling, add 3 tablespoons of baking soda. Add 10 bites in the bath. Let soak for 30 seconds. When they puff up a bit, remove the bites from the bath and place on a baking sheet with parchment paper until it’s full. Make sure not to crowd the baking sheet. Brush the tops of each bite with coconut oil, then sprinkle with course salt then bake at 450F for 10-12 minutes, or until the tops are nice and brown. Keep an eye on them about halfway through because they will darken quickly. Remove from the oven and enjoy with a spicy mustard, warm cheese dip or a favorite dipping sauce of your choice. Enjoy!
