Vegan No Bake Strawberry Oat Bites

My Vegan No Bake Strawberry Oat Bites are decadent and delicious – the perfect breakfast treat.  Some key ingredients are rolled oats, strawberries and nondairy chocolate.  These oat bites are also quick and easy to make.

 


 

Vegan No Bake Strawberry Oat Bites

Oat Crust:
1 1/2 cups +2 tablespoons of oats
1/2 cup + 1 tablespoon of creamy peanut butter
1/3 cup of sugar free maple syrup
Strawberry Filling:
2 Cups of strawberries fresh or frozen
1/3 Cup of water
1 Tablespoon of cornstarch
1 Tablespoon of coconut sugar, (optional)
Chocolate Topping:
1 tablespoon of coconut oil
Directions:
-Add 2 cups of strawberries into a saucepan with 1/3 cup of water, 1 tablespoon of corn starch and 1 tablespoon of coconut sugar. Stir until combined and thickened. Set aside.
-In a medium bowl, add sugar free maple syrup, oats, peanut butter then combine well.
-In a silicone square pan, add 1 tablespoon of oat mixture. Then press down with the back of the spoon until smooth. Freeze for 15 minutes then add 1 to 2 tablespoons of strawberry jam to each section and freeze for 20 minutes.
-In a double boiler melt nondairy dark chocolate and coconut oil. Drizzle melted chocolate on top of each section and freeze for 30 minutes or longer until hardened. Remove from silicone pan and enjoy!
