Vegan Lentil Sweet Potato Curry

This creamy Vegan Lentil Sweet Potato Curry is smooth and delicious.  Simply toss everything into one pot and you will have a bold and tasty dinner.  The perfect comfort food soup!

 


 

Vegan Lentil Sweet Potato Curry

Ingredients:
1 tablespoon of olive oil
½ large onion, chopped
2 cloves of garlic, minced
1 tablespoon of fresh ginger, grated
3 cups of diced sweet potato
1 ½ cups of red lentils
3 cups low sodium vegetable broth
1 15 oz. can of crushed tomatoes
1 tablespoon of sugar free maple syrup
1 tablespoon of peanut butter
2 tablespoons of fresh lime juice
1 15 oz. can of full-fat coconut milk
Garnish with fresh basil, chopped
Warm crusty garlic bread
Spice Ingredients:
1 tablespoon of Italian seasoning
2 teaspoon of curry powder
1 teaspoon of smoked paprika
1 teaspoon of turmeric
1 teaspoon of chili powder
½ teaspoon of coriander
¼ teaspoon of black pepper
½ teaspoon of himalayan salt
Directions:
-In a large pot add 1 tablespoon of chopped onion and garlic and saute for 3 minutes or until translucent.
-Add in the diced sweet potato and all spices then saute ingredients.  Cook for 10 minutes until spices become aromatic and sweet potatoes start to brown.  Then add in the lentils, vegetable broth, lime juice, sugar free maple syrup, peanut butter and crushed tomatoes.  Cover and simmer for 25 minutes or until lentils and sweet potatoes are done.
-Pour in ¾ cup of the coconut milk and mix well.
-Add ½ of the soup to the blender and blend until smooth.  Add soup back to the pot and simmer for 5 to 10 minutes.  Serve with warm crusty garlic bread and garnish with chopped basil. Enjoy!
