This delicious Vegan Jambalaya is the ultimate comfort food for a chilly day. Made with plant based sausage, black beans, chopped tomatoes, brown rice and white onions, it’s super tasty, flavorful, and very nutritious. The spice combination helps to deliver a kick. This could very easily become a favorite main dish.

Vegan Jambalaya
Ingredients:
1 White onion, chopped
1 Clove of garlic, minced
1 Red bell pepper, cut into small chunks
1 Celery stalk, chopped
1 Can of (14 oz.) crushed tomatoes
1 Can of (15 oz.) black beans, drained
1 Teaspoon of smoked paprika powder
2 Teaspoons of soy sauce
1 Teaspoon of Harissa
Himalayan salt and pepper
1/2 Cup of fresh basil, chopped
Directions:
-In a large pan or cast iron skillet heat some olive oil and sauté the onion for about 2-3 minutes. Then add the garlic and cook for another minute. Add the garlic and cook for another minute. Add the red pepper, celery and plant based sausage. Cook for about 3 minutes.
-Mix in the cooked brown rice, black beans, crushed tomatoes, spices the soy sauce and harissa and cook for about 5 minutes. Add seasoning and stir in chopped basil. Enjoy!
