Vegan Greek Salad

This Vegan Greek Salad has Kalamata Olives, White Onion, Grape Tomatoes, Romaine Lettuce, and Vegan Feta Cheese.  It’s absolutely delicious!

 


 

Greek Salad

Ingredients:
1 Zucchini, cut into quarters
2 Cups of cherry tomatoes, halved
1 Medium red onion, sliced
1/2 Cup of Kalamata olives, pitted
1 Medium avocado, peeled and chopped
1/2 Cup of vegan feta cheese, cubed
Garnish with fresh basil, chopped

Greek Salad Dressing
1/2 Cup of olive oil
1/4 Cup of red wine vinegar
2 Tablespoons of lemon juice
1 Garlic clove, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of black pepper

Directions:
-Whisk all the dressing ingredients in a medium size bowl until combined or you can use a food processor until the dressing emulsifies. Set aside.
-In a large bowl combine the cherry tomatoes, zucchini, onions, olives, avocado and vegan feta cheese in a bowl and toss.
-On a serving plate add lettuce, vegetables and vegan cheese. Garnish with chopped basil, then pour dressing over the salad and toss to serve. Enjoy!
