Try this bold and delicious Vegan Greek Salad for lunch.  It has key ingredients like sliced cucumber, Kalamata olives, onion and green pepper.  It was topped off with a tasty vinaigrette dressing.  It’s great to serve during the spring and summer months.

 


 

Vegan Greek Salad

Ingredients:
1 pound of Roma tomatoes, sliced in large chunks
1/2 large cucumber peeled and sliced, with slices halved
1 green bell pepper, chopped
1 Medium red onion, sliced
1/2 Cup of kalamata olives, pitted
1/2 Cup of vegan feta cheese, cubed, or as desired
Garnish with fresh basil, chopped
Greek Salad Dressing
1/2 Cup of olive oil
1/4 Cup of red wine vinegar
2 Tablespoons of lemon juice
1 Garlic clove, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of black pepper
Directions:
-Whisk all the dressing ingredients in a small size bowl until combined or you can use a food processor until the dressing emulsifies. Set aside.
-In a large bowl add the Roma tomatoes, cucumber, onions, kalamata olives, and vegan feta cheese. Add in the dressing and toss to combine.
-On a serving plate the add salad then garnish with chopped basil. Serve with warm pita bread! Enjoy!
