Vegan Chocolate Nut Cups

Vegan Chocolate Nut Cups are a decadent and crunchy dessert treat that is easy to make.  It only uses three ingredients:  nondairy chocolate, crushed pistachios and chopped walnuts.

 


 

Vegan Chocolate Nut Cups

Ingredients:
1-2 tablespoons of coconut oil
¼ cup of pistachios, crushed
1/3 cup of walnuts, chopped
Directions:
-On a wooden cutting board, chop nuts. Set aside.
-In a double boiler add the nondairy chocolate and coconut oil, stir until melted and smooth.
-In a round silicone pan, add 1 tablespoon of melted chocolate into each round section.  Smooth the chocolate out in each section as necessary with the back of a small spoon.  You can also lightly shake the silicone mold as necessary to smooth out the chocolate in each section.
-Place the tray into the freezer for about 10 minutes to set.
-Heat a skillet over low heat and toast the nuts.  Toss them over the heat for 3-5 minutes or until they turn slightly golden.  Remove the tray from the freezer then add chopped nuts into each section.
-Add 1 to 2 tablespoons of melted chocolate over top of the nuts, you can add additional chocolate if necessary.   Top with chopped nuts if desired.
-Return the tray to the freezer for 1 hour or until hardened.  Remove chocolate from silicone tray and enjoy!
