This Vegan Cowboy Caviar Dip has the corn, black beans, red onions, and jalapeno peppers that gives it a great kick.
Vegan Cowboy Caviar Dip
1 15 oz. Can of black beans, drained and rinsed
1 Medium red bell pepper, diced
1 jalapeño pepper, diced
1/3 Cup of fresh basil, chopped
3/4 Cup of red onion, chopped
1 Avocado, chopped
1/4 Cup of fresh lime juice
2 Tablespoons of red wine vinegar
1/2 Teaspoon of Himalayan salt
1/2 Teaspoon black pepper
1/4 Teaspoon of smoked paprika
1 Tablespoon of a liquid sweetener, (sugar free maple syrup or honey)
-Chop vegetables and set aside. In a small bowl, combine dressing ingredients. In a large bowl add chopped vegetables then pour dressing on top and toss to coat.
-Refrigerate until ready to serve. Add 1 tablespoon of lime juice before serving then toss and enjoy. Serve with your favorite tortilla chips.
