I made some awesome Vegan Chocolate Peanut Butter Cookies! The chocolate and peanut butter combination made this a crunchy and delicious cookie. The recipe is listed below.
Ingredients:
1/2 Cup of coconut oil, solid able to scoop
1 Cup of coconut sugar
2 Teaspoons of vanilla extract
1/4 Cup of coconut milk
1/4 Cup of unsweetened applesauce
2 and 1/3 Cups of gluten free all purpose flour, @bobsredmill
1 Teaspoon of baking soda
1/2 Teaspoon of Himalayan salt
1 4 oz. Dark nondairy chocolate bar, chopped (1 cup)
1/4 Cup of peanut butter chips, (optional)
Directions:
-Preheat oven to 375F degrees. Line a baking sheet with parchment paper and set aside.
-In a large bowl mix together the coconut oil, coconut sugar and vanilla until combined. Add in the coconut milk and applesauce and mix until well combined, set aside. In a separate bowl whisk the flour, baking soda and salt until well combined.
-Add the dry ingredients into the wet mixture and stir with a spoon until ingredients are combined. The batter will be thick. Fold in 1 cup of the chocolate chunks chopped and peanut butter chips.
-Scoop three tablespoons sized mounds of dough into the prepared cookie sheet. Leave a few inches between each cookie. Bake for 9 to 15 minutes, or until the edges are golden and centers have set.
-Then transfer to a cooling rack and enjoy!
