Vegan Chocolate covered Apple Lollipops

Ingredients:
2 Large red apples, or as desired
1 10 oz. bag vegan nondairy chocolate chips
Toppings: chopped walnuts, nondairy Carmel or drizzled melted nondairy chocolate
1 Tablespoon of coconut oil

Directions;
-Slice the apples into 3/4 inch thick slices and remove the stem and any seeds. It’s about 4 per slice.
-Gently insert a small popsicle stick into the bottom of the apple slices. Then use a paper towel to remove any juice form the apples. Place the apples on a baking sheet with parchment paper. Pour a bag of nondairy chocolate chips into a double boiler with 1 tablespoon of coconut oil or you can use a microwave safe bowl. Microwave the chocolate chips in 30 second increments. Mix until melted. Pour the chocolate on a flat plate.
-Dip the apple slices in the chocolate, make sure to cover both sides with chocolate and place them on a baking sheet with parchment paper. Add the chopped walnuts and dried cranberries
then put the chocolate covered apples in the refrigerator for 10 minutes or until the chocolate has firmed.
-Remove apples from the refrigerator and drizzle with melted chocolate or melted nondairy Carmel. You can also add any topping of your choice to the apples. Store in the refrigerator until ready to eat. Enjoy!
