You have got to try making these Vegan Chocolate Chip Cookie Dough Cups. They are made with a vegan chocolate chip cookie in the center and covered with melted, nondairy chocolate chips. Very decadent and a great dessert.
Vegan Chocolate Chip Cookie Dough Cups
Ingredients:
1 1/4 Cup of almond flour, blanched
1/2 Cup of coconut sugar
1/2 Cup of coconut flour
1/4 Cup of sugar free maple syrup
1/4 Cup of almond milk
1 Tablespoon of coconut oil, melted
2 Teaspoons of vanilla extract
Pinch of Himalayan salt
1/2 Cup of nondairy dark chocolate chips
Chocolate:
2 1/2 Cups of nondairy dark chocolate chips
1 to 2 tablespoons of coconut oil, melted
Directions:
-In a medium size bowl, add the almond flour, coconut flour, Himalayan salt and coconut sugar. Combine ingredients then add in sugar free maple syrup, almond milk, melted coconut oil and vanilla extract. Mix again until a dough forms. Add in chocolate chips. Set aside.
-Add paper liners to a cupcake pan then set aside.
-In a double boiler, melt chocolate and coconut oil, stir until smooth and creamy. You can also microwave in 30 second intervals stirring until chocolate is melted.
-Pour 2 to 3 spoonfuls of melted chocolate into the base of each paper liner then take a cookie scoop of cookie dough and place a round cookie dough on top of the melted chocolate.
-Add melted chocolate on top of the cookie dough until fully covered.
-Put in the refrigerator for 1 hour or until the chocolate solidifies. Enjoy!
