These light and delicious Vegan Chocolate Brownie Bites are full of chocolaty flavor. They have a moist texture and they are dipped in non-dairy chocolate. Best of all – they are bite sized, which makes them easy to enjoy. They are a great dessert item.
I can find all of my baking ingredients from Whole Foods Market, Wegmans and Sprouts Farmers Market. They have an excellent assortment.

Vegan Chocolate Brownie Bites
Ingredients:
2 Cups of creamy almond butter or peanut butter
2 Cups of pumpkin purée
1/2 Cup of sugar free maple syrup
1 Cup of cocoa powder
2 Teaspoons of baking soda
1/4 Cup of granulated organic sweetener of choice
Chocolate Glaze:
1 to 2 Cups of nondairy chocolate chips
1 to 2 Tablespoons of coconut oil
Directions:
-Preheat the oven to 350F/180C. Grease an 18-count mini cupcake tray or add cupcake liners. Set aside.
-In a large mixing bowl or high speed blender, combine all your ingredients and combine until a smooth batter remains.
-Divide the brownie batter into the cupcake liners. Bake for 15-20 minutes until a toothpick is inserted in the muffin comes out clean. Cool on a wire rack for 10 minutes or until completely cooled.
-Use a double boiler or microwave to melt chocolate until smooth. Dip each brownie bite into chocolate and put onto large tray with parchment paper. Let the chocolate set. Enjoy!
