I used some brown rice crisps and nondairy chocolate chips to make these delicious Vegan Chocolate Bars. They are a crunchy dessert treat that your family is sure to enjoy.
Vegan Chocolate Bars
2 Cups of rice crispy cereal
1/4 Cup of dried cranberries, chopped
1 1/4 Cup of nondairy dark chocolate chips
3/4 Cup of creamy peanut butter
1/3 Cup of coconut oil, melted
1/3 Cup of sugar free maple syrup
1 Teaspoon of instant coffee
1/4 Cup of nondairy white chocolate, (drizzled on top)
Directions:
-in a large bowl, add the rice crispy cereal and dried cranberries to the bowl. Set aside.
-In a double boiler add the nondairy dark chocolate chips, peanut butter, coconut oil, sugar free maple syrup and instant coffee. Stir until melted and smooth. You could also heat in the microwave for 45 second intervals stirring until smooth.
-Pour the chocolate mixture in the bowl with the rice crispy ingredients then combine well.
-Add the chocolate mixture to a square silicone pan or a pan of your choice then spread evenly to distribute well. Refrigerate for about 20 minutes.
-Melt 1/4 cup of white chocolate in a double boiler with 1 tablespoon of coconut oil. Combine until smooth. Then remove the chocolate bars from the refrigerator and drizzle the white chocolate. Add to the refrigerator uncovered for about 2 hours until firm or overnight. Slice and serve. Enjoy!
