Sandwiches have always been a lunchtime favorite in my house. How about yours? This Vegan Chickpea Sandwich is made from fresh vegetables, chickpeas and some crusty sourdough bread. And it’s quick and easy to make. The recipe is listed below.
Ingredients:
1 15 Oz. Can of chickpeas, rinsed and drained
2 Tablespoons of lemon juice
3 Tablespoons of hummus
2 Teaspoons of olive oil
1 1/2 Teaspoon of Dijon mustard
1 Celery stalk, chopped
1 Tablespoon of fresh dill, minced
2 Teaspoons of fresh basil finely chopped
1 Small red onion, chopped
1 Teaspoon of Italian seasoning, (optional)
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon black pepper
Sliced tomatoes (Optional)
For Serving:
Bread (Gluten-Free)
Romaine Lettuce
Directions:
-Add drained chickpeas to a medium size bowl, mash chickpeas. You can use a potato masher or a fork.
-Then add lemon juice, hummus, olive oil, and Dijon mustard to a bowl. Then use a fork to mash the chickpeas or you can use a potato masher until they are combined.
-Stir in celery, dill, basil, red onion, Italian seasoning, Himalayan salt and black pepper to taste.
-Begin to assemble the sandwich, take two pieces of bread add the lettuce then top with the chickpea filling in on each piece of bread, or as desired. -You can also toast the bread, add a thin layer of vegan mayonnaise and tomatoes. Enjoy!
