My Vegan Chickpea Salad is quick and easy to make using ingredients like mashed chickpeas, chopped celery and onions, Dijon mustard, and vegan mayo. It is full of flavor and packed with protein.
Vegan Chickpea Salad
2 15 oz. Cans of chickpeas
1 Stalk of celery, chopped
1/2 Large white onion, chopped
2 Tablespoons of Italian seasoning
1 Teaspoon of smoked paprika
Himalayan salt and pepper
4-5 Tablespoons of vegan mayonnaise, or as desired
2-3 Teaspoons of Dijon mustard
1-2 slices of vegan bacon
1/2 Head of artisan lettuce
-Rinse and drain the chickpeas then add to a large bowl. Mash with a fork or use a potato masher until desired consistency.
-Add onion, celery, spices, Dijon mustard and vegan mayonnaise. Mix well to combine ingredients. Serve immediately over lettuce topped with crumbled vegan bacon and warm baguette bread. Enjoy!
