Vegan Chickpea Salad with Sun Dried Tomatoes and Feta Cheese is the perfect lunch. The mixture of chickpeas, sun dried tomatoes, onion, romaine lettuce and vegan feta cheese is quite delicious.
Vegan Chickpea Salad with Sun-dried Tomatoes and Feta Cheese
1 Head of romaine lettuce, chopped
1 1/2 cups of chickpeas rinsed and drained
1/2 Red onion, sliced
1/2 Cup cubed cucumber, or add more if desired
6 Sun-dried tomatoes, chopped
1 Package of plant based chik’n, chopped
1/2 Cup of vegan feta cheese, crumbled
1/2 Cup of chopped fresh basil
1/2 Cup of olive oil
1/4 Cup of red wine vinegar
2 Tablespoons of lemon juice
2 garlic cloves, minced
1 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of pepper
-Combine the salad ingredients in a large bowl, toss and combine.
-In a small bowl add dressing ingredients, then whisk together. Pour dressing over salad, toss to coat. Serve and enjoy!
