This Vegan Chickpea Salad Sandwich is a delicious lunch that is really quick and easy to make. I made the salad sandwich by mixing some crushed chickpeas, celery, red onion and vegan mayo. I spread it on some toasted sourdough bread and added lettuce, tomatoes, and vegan cheddar cheese to complete this delicious sandwich.
Vegan Chickpea Salad Sandwich
Ingredients:
1 15 oz. can of chickpeas, drained and rinsed
1/4 Medium red pepper, chopped
1/2 Red onion, chopped
1/2 large celery stalk, chopped
1/3 Cup of vegan mayonnaise
1/4 Teaspoon of smoked paprika
1/4 Teaspoon of Italian seasoning
1/8 Teaspoon of Himalayan salt
1/4 Teaspoon of black pepper
Vegan cheese, slices
Romaine lettuce
Sliced tomatoes
4 to 6 slices of of sourdough bread, toasted
Directions:
In a large bowl, add the chickpeas, rinsed and drained. Mash with a fork until smooth and has a nice texture. Add bell pepper, onion, celery, vegan mayonnaise and seasoning until well combined.
-Serve on toast with lettuce, tomato and vegan cheese or your favorite toppings. Enjoy!
