Try this delicious Vegan Chickpea Melt for lunch. It’s a delicious, quick and easy chickpea salad and melted vegan cheese sandwich.
Vegan Chickpea Melt
Ingredients:
4 Slices of sourdough bread
1 Tablespoon of vegan mayonnaise, or to taste
1 Can of chickpeas, rinsed and drained
1 Tomato, sliced
1/2 White onion, chopped
Vegan cheddar cheese, sliced
2 Tablespoons of fresh basil, chopped
Directions:
-In a medium size bowl, mash the chickpeas then add the onion, chopped basil, seasoning and vegan mayonnaise. Combine well.
-On one side of the bread add the chickpea salad, sliced tomatoes and sliced cheddar cheese. On the outside of both sides of the bread lightly spread vegan butter then add to a cast iron pan. Cook until golden brown then flip to the other side and repeat process until golden and cheese is melted. You can also broil chickpea melt in the oven and cook for 3 to 5 minutes. Serve with your favorite salad and enjoy!
