Vegan Caramel Chocolate Chip Muffins

Vegan Caramel Chocolate Chip Muffins are great for breakfast.  They are flavorful and moist.



Vegan Caramel Chocolate Chip Muffins

Dry Ingredients:
3 1/4 cups of gluten free flour
1 1/4 cups of organic sugar
1 tablespoon of baking soda
1 tablespoon of baking powder
1/2 teaspoon of cinnamon
Wet Ingredients:
1/3 cup of vegetable oil
1/2 cup of vegan butter, melted
1 1/4 cups of almond milk
1 tablespoon of vanilla extract
1 tablespoon of apple cider vinegar
-Preheat the oven to 350F degrees.
-Line a 12-cupcake pan with liners then set aside.
-In a large bowl, add all the dry ingredients then whisk together until combined.
-Add the wet ingredients into the dry and mix well, then add the nondairy caramel chocolate chips.
-Fold in chocolate chips, use a cookie scooper to divide the batter into each liner.  The batter should reach the top of each cup liner.  You can also add additional chocolate chips on top of the muffins, as desired.
-Bake for 22-30 minutes or until you can insert a toothpick and it comes out clean.
-Allow the muffins to cool on a wire rack for about 5 minutes.  Enjoy!
