You have got to make this Vegan Buffalo Chick’n Salad. I used some plant based chick’n filets dipped in homemade buffalo sauce, and added romaine lettuce, red onion, and vegan feta cheese. I drizzled a creamy tahini dressing over the salad.
Vegan Buffalo Chick’n Salad
Ingredients:
1/2 Head of romaine lettuce, chopped
2 Plant based Chick’n filets, chopped
1/2 Cup of vegan feta cheese, chopped or as desired
1 Avocado, chopped
2/3 Cup of shredded carrot
1 Red onion, sliced
Buffalo Sauce:
1/2 Cup of hot sauce
1 Tablespoon of vegan butter
Directions:
-Preheat oven to 450F.
-Cut parchment paper and add to a baking sheet. Set side.
-Prepare plant based Chick’n filets according to directions on packaging.
-In a small saucepan add hot sauce and vegan butter. Stir until melted. Dip cooked filets in sauce then slice.
-On a serving plate add chopped lettuce, sliced onion, vegan feta cheese, chopped buffalo Chick’n, chopped avocado and shredded carrot.
Drizzle with your favorite dressing add enjoy.
