These Vegan Breakfast Tostadas are made from vegan breakfast sausage, russet potatoes, sautéed onions and red pepper, and served on warm tortilla shells.
Vegan Breakfast Tostadas
Ingredients:
2 Large potatoes, quartered
1/4 Cup of refried beans, or add more if desired
1 Tablespoon of Italian seasoning
Himalayan salt and pepper, to taste
1/2 Teaspoon of smoked paprika
1 Tablespoon of olive oil
4 Plant based breakfast sausage links, sliced
1/2 Pint of grape tomatoes, sliced in half
1 Avocado, chopped
Vegan Feta cheese, sliced crumbled
Garnish with fresh basil, chopped
6 Corn Tortilla shells
Directions:
-Preheat the oven to 400F.
-Prepare a baking sheet with parchment paper, then set aside.
-Wash potatoes and pat dry, cut into quarters.
-Slice grape tomatoes in half, then add to a large bowl along with potatoes. Add seasoning and 1 tablespoon of olive oil then combine ingredients.
-Add to a baking sheet with parchment paper and bake for 20 minutes or until golden brown. Remove from oven and set aside.
-Prepare plant based breakfast sausage according to directions on packaging, then set aside.
-Add the tortillas to a large cast iron skillet or a pan of your choice with 1 tablespoon of olive oil on medium heat and cook on each side for 10 to 20 seconds then add to a cooling rack.
-Add tostadas to a serving plate and assemble with refried beans, roasted tomatoes and potatoes, plant based breakfast sausage, vegan feta cheese and garnish with chopped basil. Drizzle with hot sauce. Enjoy!
