Today I made this healthy and delicious Vegan BLT Salad for lunch. The vegan bacon was crunchy and delicious, and it made for a classic salad when combined with romaine lettuce, grape tomatoes, red onion, and an awesome vegan feta cheese. This salad tastes great all by itself, and you can add the dressing of your choice.

Vegan BLT Salad
Ingredients:
Coconut Bacon
1 Cup of coconut flakes
1/2 Tablespoon of liquid smoke
1 Tablespoon of soy sauce
1 Tablespoon of sugar free maple syrup
1 package of vegan bacon, Lightlife Smart Bacon
Salad
Lettuce of choice
1 jar of Sun dried tomatoes, about 8 sliced, add more if desired
Vegan feta cheese, crumbled, Violife
Croutons, optional
1 Jar of green olives, add as desired
Directions:
-Preheat the oven to 350F degrees.
Make the coconut bacon, stir all the ingredients together in a bowl until the coconut is completely coated in the liquid smoke, sugar free maple syrup and soy sauce.
-Then pour onto a prepared baking sheet and smooth out to a single layer.
-Bake at 350F degrees for 10 to 15 minutes until it’s crispy.
-Once the coconut bacon is done, toss together the lettuce, vegan bacon, vegan cheese, sun-dried tomatoes and olives. Add your favorite vinaigrette dressing or a dressing of your choice and enjoy.
