Vegan Avocado Hummus

Avocado Hummus is something you can serve while watching a good movie or even a football game.  Chickpeas, avocado, tahini, lime juice, and spinach are some of the key ingredients.  This hummus is tasty and full of flavor, and it goes well with delicious crackers, sliced vegetables or corn chips.

I’ve found that Mom’s Organic Market also has an excellent selection of fruits and vegetables as well as Whole Foods MarketWegmans and Sprouts Farmers Market.  You can discover many hard to find ingredients in their baking, fresh fruits and vegetables aisles.  For some great kitchen essentials, check out the ones I use on my Shop Page.


Vegan Avocado Hummus

Ingredients:
1 19 oz Can of chickpeas, rinsed and drained.
1 Medium-sized avocado, remove skin, (120 grams)
1/4 Cup of tahini
1/4 Cup of lime juice (about 2 limes)
1 Medium size red onion
1/2 Teaspoon of Himalayan salt
1/2 Teaspoon of smoked paprika
1 Small handful of fresh spinach lightly packed cup (about 30 grams)
2 Tablespoons of water

Directions:
-Add all of the ingredients to a food processor or a high speed blender. Combine ingredients until creamy.
-Add to bowl and serve with crackers, pita chips or chopped vegetables. Enjoy!
