Fall is a perfect time of year for Vegan Apple Cider Doughnuts. These were dipped in a delicious, creamy glaze.
Vegan Apple Cider Donuts
Ingredients:
1/2 Cup of organic sugar
1 1/2 Cups of gluten-free all purpose flour
1/2 Teaspoon Himalayan salt
1/2 Teaspoon of cinnamon
1/2 Cup of apple cider
1/4 Cup of nondairy almond milk
3 Tablespoons of unsweetened applesauce
2 Tablespoons of melted vegan butter
Topping:
Glaze:
1//2 Cup of organic powdered sugar, (or as needed)
2/3 Tablespoons of nondairy almond milk, (or as needed until smooth).
Directions:
-Preheat the oven to 350F degrees and spray a donut pan with nonstick spray.
-In a large bowl, whisk together the flour, organic sugar, baking powder, Himalayan salt and cinnamon. Then add in the apple cider, almond milk, applesauce, and vegan butter. Combine well.
-Use a piping bag with a large tip into to each donut cavity. Fill 3/4 of the way full. Then bake for 8 -10 minutes, until edges are lightly brown and they spring back when lightly pressed. Cool on a cooking rack.
-Whisk glaze ingredients until combined and smooth.
-Dip each donut into the glaze mixture to coat well then add to a baking sheet with parchment paper to set the glaze. Serve and enjoy!
