This Vegan Apple Cider Cake is great to serve for the Thanksgiving holiday. It’s moist and delicious and it’s topped off with a creamy maple glaze.
Vegan Apple Cider Cake
Ingredients:
Cake:
2 1/2 cups flour gluten-free flour
1/4 cup of organic sugar
1 1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of Himalayan salt
1 1/2 tablespoon of pumpkin spice
1/2 cup of unsweetened applesauce
1 1/2 cups of unsweetened apple cider
2 teaspoons of vanilla extract
Maple Glaze:
1/2 cup of organic powdered sugar
2 tablespoons of sugar free maple syrup
1 teaspoon of maple extract
2 teaspoons of vegan butter, softened
Pinch of salt
Directions:
-Preheat over to 350F.
-Grease a 9 inch bundt pan, then set aside. In a large bowl, add gluten-free flour, sugar, baking powder, baking soda, Himalayan salt and pumpkin spice. Whisk to combine.
-Add to the same bowl the apple cider, unsweetened applesauce, apple cider vinegar, and vanilla. Use a silicone spoon and mix ingredients. Try not to overmix.
-Pour in the prepared Bundt pan. Bake for 35-45 minutes or until a toothpick is inserted comes out clean. Remove from the oven to cool for 30 minutes on a wire rack.
-Add the ingredients for the maple glaze in a small bowl then combine. Drizzle over the cake, slice and enjoy!
