This Unstuffed Peppers Dish is a great meal prep dish. The main ingredients are plant based ground meat and red and green peppers. This is a delicious dish to serve during the big game or when entertaining friends.
Unstuffed Peppers
Ingredients:
2-3 tablespoons of olive oil
1 white onion, chopped
2 cloves of garlic, minced
1 green pepper, chopped
1 red pepper, chopped
1 tablespoon of tomato paste
1 tablespoon of chili powder
1/8 teaspoon of red pepper, flakes
1 package of beyond meat, crumbled
1 tablespoon of tomato paste
1/2 cup of low sodium vegetable broth
1 tablespoon of Worcestershire sauce
1/2 cup of marinara sauce
Himalayan salt and pepper, (optional)
Directions:
-Preheat the oven to 400F.
-Over medium heat, add 2 tablespoons of olive oil in a medium size pot or 12-inch cast iron pan. (You can use a large pot first then transfer to a cast iron pan).
-Add the onions, peppers and garlic. Mix until onions are translucent and sauté for 5 to 7 minutes.
Add the plant-based meat, and sauté in pan. Add seasoning and cook breaking meat up in the pot.
-Stir in fire roasted diced tomatoes, Worcestershire sauce, tomato paste, low sodium vegetable broth and pepper. Stir to incorporate and cook off most of the liquid from the tomatoes. Then add the marinara sauce, Gently stir to combine.
-Transfer all ingredients to a large cast iron skillet then sprinkle plant based mozzarella cheese and bake for 4-8 minutes or until cheese is melted. Top with fresh chopped basil. Serve with cooked quinoa and crusty bread. Enjoy!
