I made this absolutely delicious Tomato and Avocado Salad with Grilled Halloumi for lunch. The grilled vegan halloumi cheese was full of flavor, which really accented this healthy salad. I made a tasty lemon feta cheese dressing and drizzled it over my salad.
Tomato and Avocado Salad with Grilled Vegan Halloumi Cheese
Ingredients:
1 to 2 Cucumbers cut in quarters 1/2 inch thick
1/2 Red onion, chopped
1/2 Cup of corn, frozen
1 1/2 Cups of cherry tomatoes, (sliced in half)
2 Medium avocado’s, chopped
Vegan halloumi cheese, sliced
1 Tablespoon of olive oil
Romaine lettuce, chopped
Garnish with Fresh basil
Dressing:
1/2 Cup of vegan feta cheese, crumbled
1/2 Cup of nondairy Greek yogurt
Zest of 1 lemon
2 Tablespoons of lemon juice
1 Clove of garlic, minced
1 Tablespoon of water
1 Teaspoon of Italian seasoning
1/2 Teaspoon of fresh basil, chopped
Directions:
-Cook corn according to directions on packaging.
-Prepare chopped vegetables then set aside.
-To make the lemon feta dressing, combine all ingredients in a blender or a food processor, and pulse until we’ll combined.
-Slice halloumi cheese and add to a cast iron skillet or a nonstick pan with 1 tablespoon of olive oil. Once the pan is hot, add the halloumi cheese and sear for 1 to 2 minutes per side until golden brown and the cheese has softened.
-Assemble salad on a serving plate with chopped romaine lettuce, fresh vegetables and grilled halloumi cheese. Drizzle with feta dressing and garnish with fresh basil. Enjoy!
