This Thai Salad with Peanut Dressing is a zesty and delicious Asian inspired salad that is great for lunch or for dinner. Some of the fresh ingredients I added are purple cabbage, red pepper, romaine lettuce, shredded carrots, and green onions. I topped it off with a spicy and flavorful peanut dressing that really made the salad pop.
Thai Salad with Peanut Dressing
Ingredients:
Peanut Dressing:
1/3 Cup of creamy peanut butter
1/4 Cup of low sodium soy sauce
2 Tablespoons of fresh lime juice
2 Tablespoons of sugar free maple syrup
2 Tablespoons of kimchi sauce to taste
2 Cloves of garlic, minced
1 Tablespoon of fresh, peeled ginger, grated
Thai Salad:
1 romaine heart, chopped (5 to 6 oz)
2 Cups of red cabbage, shredded ( 5 to 6 oz.)
1 Cup of shredded carrots, 2 medium (4.5 oz.)
3 Green onions, chopped (0.7 oz.)
1 Red bell pepper, chopped (0.3 oz.)
1/2 Cup of cilantro, chopped, chopped (0.5 oz.)
Directions:
-To prepare the dressing, add all of peanut dressing ingredients to a small bowl with minced garlic and ginger, whisk until combined then set aside.
-Chop the vegetables then add them to a serving plate or large bowl. Drizzle the dressing as needed and toss. Add chopped nuts, (optional). Enjoy!
