Sweet Potato Pie is a great holiday dessert that your family will really enjoy. In addition to sweet potatoes, it’s made using sugar free maple syrup, coconut milk, and a tasty assortment of spices like nutmeg, ground cloves and cinnamon.
Sweet Potato Pie
Ingredients:
2 Large sweet potatoes
3/4 Cup of coconut milk
2 Teaspoons of cinnamon
1/2 Teaspoon of ginger
2 Tablespoons of cornstarch
1/4 Teaspoon of nutmeg
1/4 Teaspoon of cardamom
1/2 Teaspoon of Himalayan salt
1 pre-made pie crust, gluten-free
Directions:
-Preheat the oven to 400F. Use a fork to poke a few holes in each sweet potato then wrap in foil.
-On a small tray place the sweet potatoes, then bake in the oven until very soft, about 45 minutes. You can also microwave them for about 9 minutes.
-Remove the sweet potatoes from the oven once done baking, slice them open to allow the steam to escape and cool down for 5 minutes.
-Lower the temperature to 375F. When the sweet potatoes have cooled down, scoop out the insides and place them into a food processor bowl.
-Add the coconut milk, sugar free maple syrup, vanilla extract, cornstarch, cinnamon, ginger, cardamom, nutmeg and Himalayan salt.
-Combine in a food processor until smooth, scrape down the sides of the bowl as desired. Pour batter into the pie crust and smooth out the top.
-Bake for about 40 minutes or until set. Remove the pie from the oven and allow to cool. Add your favorite whipped cream topping. Slice and enjoy!
