Sun Dried Tomato and Arugula Salad

Sun Dried Tomato and Arugula Lentil Salad is a great salad that is bursting with flavor.  I topped it off with vegan feta cheese and an Italian vinaigrette dressing.


Sun Dried Tomato and Arugula Lentil Salad

1/2 cup of dry lentils
2 cups of arugula
1/2 cup of sun-dried tomatoes, sliced
1 zucchini, quartered
1/2 red onion, sliced
1 tablespoons of slivered almonds, chopped
Vegan feta cheese, crumbled
Garnish with basil, chopped
Italian Dressing:
1/2 cup of olive oil
1/4 cup of red wine vinegar
2 tablespoons of lemon juice
1 tablespoon of sugar free maple syrup, optional
2 teaspoons of Dijon mustard
1 clove of garlic, minced
1/2 teaspoon of Italian seasoning
1/4 teaspoon of Himalayan salt
1/2 teaspoon of pepper
-To prepare the dressing add ingredients to a small bowl and whisk until combined. Set aside.
-Cook the lentils according to directions on packaging. Then cool when done.
-In a large bowl add the arugula, sun-dried tomatoes, cooked lentils, zucchini and Italian dressing. Toss to combine.
-Top with vegan feta cheese and slivered almonds. Enjoy!
