I made a quick and easy Stuffed Avocado Salad. In addition to the avocado, I used chickpeas, celery and red onion as some of my ingredients. The celery and chickpeas added a very flavorful taste. This is a light and different way to serve a salad. This salad is a good side dish, as well as a great light meal.

Stuffed Avocado Salad
Ingredients:
1 (14 oz) can of chickpeas, drained and rinsed
1/2 Lemon, juiced
1/4 Cup of vegan mayonnaise, or 3 to 4 tablespoons of hummus
1-2 small stalks of celery, chopped
1/4 Cup of red onion, chopped
1/4 Teaspoon of onion powder
Himalayan salt and pepper
1/4 Teaspoon of smoked paprika
3 Avocados, sliced in half and seed removed
Directions:
-Drain and rinse the chickpeas, place in a medium size bowl and roughly mash about 3/4 of chickpeas with potato masher or a fork until the desired consistency. Add the rest of the ingredients and the vegan mayonnaise and mix well.
-Once you have sliced the avocados in half and removed the seeds, scoop out some of the flesh then squeeze or rub a little lemon juice on the flesh to keep from browning.
-Fill the avocado with the chickpea salad top with Himalayan salt and pepper, chopped basil or parsley. Enjoy!
