Spiral Chickpea Pasta Dish

This Spiral Chickpea Pasta Dish is healthy and delicious.  It’s really easy to make from spiral chickpea pasta, Kalamata olives, grape tomatoes and red onion.  It’s a nice side dish to serve for the 4th of July Holiday.

 


 

Spiral Chickpea Pasta Dish

Ingredients:
1/2 cup of arugula, chopped
1 cup of cherry tomatoes, halved
1/4 cup of red onions, diced
1/2 cup of corn, cooked
1/3 cup of Kalamata olives, sliced in half
Garnish with basil, chopped
Greek Salad Dressing:
1/2 Cup of olive oil
1/4 Cup of red wine vinegar
2 Tablespoons of lemon juice
1 Garlic clove, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of black pepper
Directions:
-Whisk all the dressing ingredients in a small bowl until combined or you can use a food processor until the dressing emulsifies. Set aside.
-In a medium size sauce pan. Cook the pasta according to directions on packaging.
-Once the pasta has cooled add all of the ingredients to a large bowl, then add the dressing toss to combine. Serve immediately. Enjoy!
