Spinach Quinoa Salad with Plant Based Sausage

Spinach Quinoa Salad with Plant Based Sausage is great as a main dish, or for lunch.  Quinoa is high in fiber and full of protein.  I added a delicious, homemade vinaigrette dressing.



Spinach Quinoa Salad with Plant Based Sausage

1/2 cup of quinoa, dry
1 package of plant-based sausage
2 cups of spinach, washed and stems removed
½ cucumber, peeled and sliced
1 medium red sweet pepper, chopped
¼ cup of vegan feta cheese, crumbled
½ white onion, sliced
Sprinkle of pomegranate seeds
Garnish with fresh basil, chopped
Vinaigrette Dressing:
1/2 cup of olive olive
1/4 Cup of red wine vinegar
2 Tablespoons of fresh lemon juice
2 Teaspoons of Dijon mustard
1 Clove of garlic, minced
1/2 Teaspoon of Italian seasoning
1/4 Teaspoon of Himalayan salt
1/4 Teaspoon of pepper
-Add all the dressing ingredients to a small bowl and whisk well until combined. Set aside.
-In a cast iron skillet over medium heat, prepare the plant-based sausage according to directions on packaging. Remove plant-based sausage from the pan then cool for 5 to 8 minutes.  Thinly slice plant-based sausage halves crosswise.  Then set aside.
-Prepare quinoa according to directions on packaging.   Let quinoa cool for about 15 minutes.
-In a large bowl, add the washed spinach and quinoa, pour over half of the dressing and toss to coat.  Add additional dressing as desired. Then add sliced cucumber, chopped red pepper, sliced plant-based sausage, crumbled vegan feta cheese, sliced onion and a sprinkle of pomegranate seeds. Toss to combine, add to a serving plate.  Sprinkle with pomegranate seeds and garnish with basil. Enjoy!
